Pairing Dinner

In the month of November, Mexico commemorates the revolution that took place in the country in 1910.

If we think of a revolution as a radical change, then last Friday, November 18, our chefs Agustín Puc and Ignacio del Rio Mora at the Skylights restaurant in Platinum Yucatán Princess, presented a culinary revolution that explored original ways to reinterpret and re-evolve their cuisine with ingredients from around the world.

At 6 o’clock in the evening, our paired dinners resumed, offering our diners the opportunity to:

  • Enjoy a welcome cocktail
  • Sample a selection of appetizers before moving to their tables
  • Enjoy the complete experience of our pairing dinner

Over the course of the evening, more and more guests arrived at our Skylights restaurant until we were completely full.

There was also a pleasant surprise to add to the fine wines and spectacular food, as a violinist provided the entertainment for the evening, adapting contemporary songs into beautiful pieces of music on this complex musical instrument.

Then it was the turn of our chefs, and our pairing dinner experience offered guests the following courses:

Starters

  1. Creamy PDO Swiss cheese and dehydrated black olives.

White wine: Chardonnay, Altotinto, Valle de Santo Tomás, Baja California, Mexico.

  1. New Zealand lamb kibbeh and secreto iberico.

Sparkling wine: PAAX Brut, Valle de Bernal, Querétaro, Mexico.

Soup

  1. New Zealand venison in mole de olla.

Red wine: Nebbiolo, Sangiovese, Tres Raíces, Dolores Hidalgo, Guanajuato, Mexico.

Main courses

  1. Spanish octopus in espelón bean chimole.

Cocktail: Guayabanero, artisanal mezcal Maria Bonita, Cupreata, Salmiana, 1921.

  1. Yucatecan pork in chilli marinade.

Red wine: Reencuentro, signature wine, Syrah reserve, Valle de San Vicente, Baja California, Mexico.

Palate cleanser

  1. Lime and basil sorbet with Xtabentún.

Dessert

  1. Cheesecake with Pecorino Romano and Chiapas double cream cheese.

Dessert wine: Mistela de Cordelia, Rosa del Perú, San Luis Potosí, México.
