Mextizo Poblano in the Skylights Restaurant of the Platinum Yucatan Princess
On the 16th of August last, guests of the Platinum Yucatan Princess Hotel in Riviera Maya enjoyed an unparalleled gastronomic evening at the hotel’s Skylights Restaurant.
The pairing dinner, which was titled ‘Mextizo Poblano,’ offered a culinary journey that fused the best of traditional Puebla cuisine with a touch of innovation from two outstanding chefs: guest chef Karina Arroyo, and host chef Agustín Puc.
The chefs
Karina Arroyo, originally from Tlaxco, in the state of Tlaxcala, brought with her the richness of her roots and passion for Mexican cuisine.
Her focus on local ingredients and traditional techniques, honed over many years’ experience, was beautifully complemented by the talents of Agustín Puc, who brought with him his in-depth knowledge of the flavours and textures that distinguish the cuisine of south-eastern Mexico.
An evening of authentic flavours at the Skylights Restaurant
Dinner began with a Memela with Pancetta Tessa Affunicata, accompanied by a tatemada sauce made with chapulines, a starter that awakened the senses and prepared diners for what was to come.
The next dish, a Cemita of Beef Fillet and Taleggio Cheese, fused Puebla tradition with a European twist and excelled for its balance of intense flavours.
The third course surprised diners with Crepes stuffed with Lamb and Huitlacoche Chambarete bathed in a smooth poblano cream sauce and topped with Idiazabal cheese shavings, which took the experience to a new level of sophistication.
The first main course, a Duet of Viejo and Poblano Mole with Roast Iberian Pork Shoulder accompanied by glazed baby carrots and caramelised onions, was a true ode to Mexican cuisine.
This celebration of Puebla cuisine would not have been complete without the traditional Chile in Nogada, presented as the second main course. A perfectly seasoned filling and a nogada sauce made with walnuts made this dish one of the evening’s favourites.
And to cleanse the palate, a Chocolate Sphere with Fermented Corn Extract and Mescal, an intriguing dessert that fused the best of Mexican cocoa with a touch of ‘fermented’ tradition.
The grand finale was a Rosé Mole Ice Cream with Muéganos and Red Fruits, accompanied by a sheep’s milk and cured Manchego cheese sauce. This mixture of flavours and textures proved to be the perfect culmination to a menu designed to celebrate the richness and diversity of Mexican cuisine.
