An interview with César, head chef at the Grand Bávaro Princess #WeArePrincess
Today we would like to introduce you to César Méndez, one of the most charismatic chefs at the Grand Bávaro Princess.
While his professional progress and growth have led him a bit away from the front line as far as the guests are concerned, the truth is that many still ask us about him.
His contagious joy, good humour, dances and songs have captured a little piece of the heart of every guest who has the fortune to meet him while he was doing show-cooking.
Today he remains with us, still developing, still training, but this time behind the scenes as head chef of the hotel’s restaurants.
Meet César in his own words
Tell us: who are you and where are you from?
My name is César Méndez. I come from the Dominican Republic, I live in San Pedro de Macoris and I’m part of the Grand Bávaro Princess.
What is your background in the hotel?
My background has been excellent. I started from scratch. My first position was kitchen assistant, and now I’m in charge of the kitchen.
What has Princess taught you?
Princess has helped me to grow professionally, thanks to the courses they provide in the hotel and the facilities they provide for us.
What is the biggest challenge in your day-to-day work?
My biggest challenge is to produce food that is enjoyed by all guests of all nationalities. Venezuelans, Chileans, French, Spanish, Americans… all kinds of guests.
Any anecdotes from your job?
Well, one anecdote of mine is that I used to do show cooking here at the Grand Bávaro Princess. And I used to dance with the guests, sing and chant with them, talk with them, and they used to drag me out of the show cooking so they could sing and dance with me.
It’s a great experience we’ve had here at the Grand Bávaro Princess.
Any message for our guests?
I welcome all our guests. I’m not out in front, I’m backstage, behind the scenes, in the kitchen, but I’m still here at the Grand Bávaro Princess
What do you like most about your job?
What I like most about my job is when a guest arrives, and I can offer them a dish that really satisfies them and makes them feel happy at the Grand Bávaro Princess.
