On the 24th of November, 2023, Italian and Mexican flavours danced a gastronomic symphony during the Italian-Mexican Wine Pairing Dinner at the Platinum Yucatan Princess Hotel.

This was a unique culinary event in which chefs Alejo Agudelo (in-house chef), Nicoletta and Agustín Puc (host chef from the company Plate-ja), joined forces to offer an unforgettable experience.

This culinary show was led by guest chef Alejo Agudelo, who is renowned for his creativity and mastery in the kitchen and participated in some of our culinary experiences when this project began.

Alongside him, host chef Agustín Puc is both an expert in fusing Mexican flavours with innovative techniques and the creator of this concept.

 

Sophisticated Pairing with Freixenet: An Unforgettable Toast

The evening was enriched by the distinguished presence of wines from the renowned Freixenet winery, which proved to be the ideal complement to each dish and lifted the gastronomic experience to unsuspected heights.

From the intoxicating freshness of the Freixenet Prosecco to the captivating seduction of the Freixenet Rose Veneto IGT, each sip became a harmonious symphony that enhanced the exquisite flavours that unfolded over the course of the evening.

The careful selection of Freixenet wines made by our sommelier Miguel Luna enhanced the sensory experience of all our diners, each bottle revealing layers of aromas and nuances that blended masterfully with the flavours of the dishes to create a perfect marriage between the exquisiteness of the food and the excellence of the wine.

Pairing with Freixenet was not simply a ceremonial act, but rather a sensory journey that elevated the evening to an unforgettable level of sophistication.

In the relentless pursuit of culinary perfection, Comalca Gourmet stands out as the cornerstone, offering a palette of the highest quality ingredients. The wide range of products on offer became the canvas on which the chefs deployed their creativity, allowing for the creation of dishes of unparalleled depth and complexity.

The chefs masterfully explore the possibilities of these elements, experimenting with them in an effort to discover harmonious combinations and complementary elements that bring new flavours and textures to life.

 

A Journey Through the Dishes: The Menu

Dishes Yucatán Princess

Entrees:

  • Crisp Cambozola Cheese Salad: An explosion of flavours with marinated cambozola cheese involtini with a balsamic vinegar, honey and mustard dressing and topped with prosciutto tuile.
  • Iberian Beef Ragu Involtini: White cabbage stuffed with Iberian beef ragu served on a tomato and mint sauce with Formagier cheese, coriander sprouts and radishes.

 

Soup:

  • Cream of cauliflower and Morbier cheese: Accompanied by vegetable shavings, grissinis with garlic confit, caramelised onion and edible flowers, paired with Sala Vive Brut.

 

Main Courses:

  • Duck Stuffed Capelletis: Delicate capelletis stuffed with duck confit, caramelised onion and toasted almonds, served over reduced duck jus with port, caramelised figs and snow pea shoots.
  • Rack of Lamb in Pistachio Crust: A feast for the senses with rack of lamb in pistachio crust, accompanied by coffee mole, polenta with crispy mint and baked onions and paired with Vaza Reserva Rioja DOCa.

 

Sorbet: Pear Sorbet with Aire de Grappa and Worm Salt

 

Dessert:

  • Reverse-Cooked Pink Chocomole: A sweet finish with pink chocomole, sweet corn ice cream, wild berry cuolis and cocoa soil, a treat for even the most demanding palates.

 

This Italian-Mexican Wine Pairing Dinner transcended expectations, taking our diners on a culinary journey where the boundaries between cuisines were truly blurred.

It was a night of sensory delight, during which creativity and mastery came together in each dish to leave an indelible mark on the hearts and palates of those fortunate enough to be part of this unique experience.
