1. Tacos al pastor

Tacos al pastor is one of Mexico’s most emblematic dishes

Its origin is said to date back to the 1960s, when Lebanese immigrants arrived in Mexico and adapted the recipe to suit local tastes.

It is made with pork marinated in a mixture of spices such as achiote, guajillo chilli and garlic. The meat is then placed on a vertical skewer and cooked slowly as it rotates. 

Finally, the tacos are served in corn tortillas and topped with onion, coriander, pineapple and spicy sauce.

 

2. Pozole

Pozole is a Mexican dish steeped in tradition

It is a dish associated with important celebrations and festivals in Mexican culture.

It consists of a corn-based broth to which pork or chicken is added and seasoned with herbs and spices such as chilli, garlic and oregano. 

It is served with lettuce, radish, onion, lemon and tostadas.

 

3. Ceviche

Ceviche is a refreshing and tasty dish, particularly popular on the Mexican coast. The influence of the sea in Mexican gastronomy is undeniable and this dish is a good example.

It is made with fresh fish or seafood, such as prawns, octopus or white fish, marinated in lemon or lime juice and cooked cold. It is then mixed with red onion, tomato, coriander and chilli to give it a spicy and lively kick. 

It is often served as a starter or even as a main course with corn tortillas or tostadas.

 

4. Chiles en nogada

Chiles en nogada is a typical dish of the country with a unique taste

The base of this dish is a poblano pepper stuffed with picadillo (a mixture of beef, pork, fruit and spices). 

But what makes this dish stand out is its colour, as it is decorated with the colours of the flag:

  • Green: parsley
  • White: walnut sauce
  • Red: pomegranate

And as it is such a good Mexican dish, it is usually served on Independence Day.

 

5. Tamales

Tamales are a traditional delicacy not to be missed when visiting Mexico.  

They are made from corn dough filled with meat, chicken, cheese, beans or chillies, wrapped in corn or banana leaves and steamed

They are popular all over the country and each region has its own variations with different flavours. 

Tamales are said to date back to pre-Hispanic times and were eaten by ancient Mesoamerican civilisations such as the Maya and the Aztecs. Historical records indicate that tamales were a staple food in these cultures and were eaten during religious ceremonies and festivals.

 

6. Chilaquiles

Chilaquiles are a traditional and hearty breakfast in Mexican cuisine, perfect for starting the day with energy. They are also a delicious example of the country’s street food. 

The dish consists of fried corn tortillas cut into triangles, covered in red or green sauce and cooked until soft. 

They are topped with cream, queso fresco, chopped onion and sometimes shredded chicken or egg.

 

7. Guacamole

Finally, guacamole, the jewel of Mexican cuisine that has conquered palates all over the world, famous for its creaminess and combination of fresh flavours.

This exquisite dish is made from mashed ripe avocado, onion, tomato, chilli, coriander and lime juice. 

It is served as a side dish or as a dip with totopos (corn chips).
