The Barcelona Princess Hotel, located at number 1 of Barcelona’s Avenida Diagonal, presents the Dagma Restaurant, its new dining venue located on the third floor of the hotel.

The space, open to customers and guests alike, has an indoor area and an outdoor area next to the pool with a suggestive menu designed by chefs Pedro Montolio and David Bourg. The proposal is designed to satisfy not only hotel guests, but also any diner who appreciates the prominence of seasonal and local produce, seamlessly blending with new culinary trends.

Chefs Pedro Montolio and David Bourg have prepared a menu for the Dagma Restaurant in which traditional Mediterranean cuisine is reinterpreted with influences from foreign cuisines, but always based on local and seasonal produce.

The menu at the Dagma Restaurant is creative, modern and innovative, taking care of every detail so that the diner can enjoy a universe of textures. Pedro Montolio, trained in gastronomic temples such as Restaurant Gaig, El Racó de Can Fabes or Manairó, was twice a finalist in the Chef of the Year competition in 2006 and 2016. Montolio highlights his favourites on the menu: the starter of coconut and lime ajo blanco soup, served on a small vegetable salad with mussels, a main course of cod loin cooked at low temperature and smoked, accompanied by a seasonal vegetable puree and a practically salty dessert of goat’s cheese foam filled with violet and citrus ice cream.

David Bourg has been part of the kitchen teams of iconic restaurants in Barcelona such as Via Veneto or Noti, and in London such as Cafe Boheme or Magnos Brasserie. Its imprint is reflected in the Dagma Restaurant menu in a recognisable way in classics such as the starter Pâté de croûte with beet reduction and pickles or the Creme Brulèe dessert with berries and sorbet.

The Dagma Restaurant has an interesting wine list with over 50 wines carefully selected by the waiting team led by Miquel Molina to achieve the perfect pairing, in which local or organic wines stand out. Dagma Restaurant is a modern and timeless space that brilliantly merges straight lines and noble materials such as concrete, metal, wood or glass that coexist in harmony and are exceptionally blended in a chromatic range of blue-grey tones capable of giving the space elegance and warmth.

In the outdoor area, called La Terraza Dagma, a more casual gastronomic proposal of tapas and dishes will be offered to be enjoyed along with a selection of drinks and cocktails designed by the chefs themselves.

In the relentless quest to minimise the environmental impact of hotel activity, the hotel management has decided to go further by implementing upcycling strategies in the operation of the Dagma Restaurant. For this reason, the wine list has been printed on paper made from grape skins and includes pieces of utensils such as plates for snacks, cocktail glasses, table plates, candle holders or sauce jugs created from hotel glass waste, through an upcycling intervention.
